Have I mentioned how much I love breakfast food? Any time of the day? Here’s a great recipe for buttermilk pancakes, next time I’ll post my infallible recipe for the little sisters to pancakes, crêpes. This recipe makes 12 servings.
Ingredients
· 3 cups all-purpose flour · 3 tbsps sugar · 3 tsps baking powder · 1 1/2 tsps baking soda · 3/4 tsp salt · 3 cups buttermilk · 1/2 cup milk · 3 eggs · 1/3 cup butter melted
1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. 2. In a separate bowl, beat together milk, butter, and eggs. 3. Add liquid mixture to dry and stir to make batter. The batter will be a bit lump so do not over-stir 4. Heat up a non-stick griddle (or you can always grease a skillet with light oil or butter) make sure it’s hot enough for water to bead if dripped on it. 5. Spoon about 1/4 cup mixture onto hot griddle and let the batter spread out. 6. Once the edges of the pancakes begin to brown and bubble, flip them to cook the other side. 7. Enjoy! |
