Crępes

As promised, here is my fail proof recipe for crępes

 

Ingredients

 

· 1 cup all-purpose flour

· 2 eggs

· 1/2 cup milk (I use 2%)

· 1/2 water

· 1/4 tsp salt

· 2 tbsps butter

 

1. In a large mixing bowl, whisk together the flour and eggs. Gradually add milk and water, stirring to combine.

2. Heat up a light oiled griddle or skillet over medium heat.  make sure it’s hot enough for water to bead if dripped on it.

3. Pour or scoop the batter into the skillet using about 1/4 cup mixture for each crępe.

4. Tilt the pan in a circular motion so that the batter coats the surface evenly.

5. Cook for two minutes until the bottom is light brown.

6. Loosen the edges with a spatula and flip the crępe to cook the other side.

 

 

Make ‘em Savory

 

I love savory crępes, especially for breakfast. I like to take a few slices of deli ham and cook them with chopped garlic and chili powder with provolone melted over it. I put that at the center of the crępe just after I flip it. I fold the edges over and top with a sunny side up egg. If I want to get fancy, I may garnish with parsley or even fresh scallions.

 

 

Make ‘em Sweet

 

If you’ve got a sweet tooth, try heating some semi-sweet chocolate chips until melted. Brush one side of a crepe with the chocolate and line with sliced strawberries. Roll and heat. Top with whipped cream and more melted chocolate.

 

 

In Case You Have Crępes left over…

 

You can store leftover crępes by stacking between sheets of wax paper, placing them in a large storage bag, and refrigerating. If you want to have them for dinner, go for Chicken and Asparagus Crępes.

 

To make this, combine cream of chicken soup, Worcestershire sauce and a little nutmeg. Set aside some of this mixture. To the majority add chicken, asparagus, and ham with a dash of salt and pepper. Spoon some into the each crępe and roll them. Place seam side down in a greased baking pan. Spoon leftover mixture over the crępes and sprinkle with parmesan cheese. Bake on 375 for about 20 minutes. You can spread some mayonnaise over the top, sprinkle with parmesan, and broil for a couple of minutes for a crispy, flavorful top.
